Couscous Vege. This couscous pilaf is derived from the rice dish, rice pilaf, a dish where rice is sauteed with aromatic spices before boiling in broth. If you're in need of a protein-packed meal that won't require a lot of time to make, then this couscous with veggies is my suggestion.
Add broth; bring to a boil. Gently add the remaining couscous to the basket and continue cooking. Add onion, cumin, harissa and almonds.
Cook couscous according to package directions.
Meanwhile, brush the zucchini, yellow peppers and eggplant with oil; sprinkle with salt and pepper.
Meanwhile, whisk together the honey, oil, vinegar, pepper, and salt to form a smooth dressing. Traditionally, couscous was made using a mixture of durum wheat, semolina, and salted water. Salt the water and bring it to a boil.
