Zaalouk Recette. Combine eggplant, tomatoes, garlic, cilantro, parsley, paprika, cumin, salt, oil, water, and cayenne in a large deep skillet or pot. Uncover pan, and crush vegetables with a potato masher to desired consistency.
Remove cover and stir in cilantro. Add eggplant, tomatoes, garlic, cilantro, lemon juice, honey, smoked paprika, salt, cumin, paprika, and cayenne pepper. Stir to combine all the ingredients well.
