While the tortillas warm, heat oil in a large non-stick skillet over medium-high heat. Wrap them in damp paper towels, then wrap that in a kitchen towel. In a medium saucepan, heat the olive oil and butter over medium heat.

For easy cleanup, line a large rimmed baking sheet with parchment paper or a silicone baking mat.
Put all ingredients in a food processor and blend until smooth. Sprinkle chili powder and cumin over the vegetables and stir to coat. Mix together until it reaches a smooth consistency.
